With summer hot on the horizon, our focus turns to the fresh seasonal produce that a Mediterranean season brings. The produce and an experienced superyacht chef are vital ingredients for an unforgettable yacht vacation.

Superyachts offer many opportunities for creative chefs who like to push boundaries and experiment with flavours while travelling the world. We recently caught up with the Head Chef Colin Van Haeften from M/Y Savannah, an 84m Feadship available for charter.

Colin originates from Perth, Western Australia. He began a Chef apprenticeship at 15 and knew his career goal from a very young age. 

How Did It All Begin?

I could not wait to leave school, and I think my teachers felt the same! If you know what you want, you should just do it, right? Fast forward 20-something years, and I still can’t imagine doing anything else! Unfortunately, I don’t have an impressive list of Michelin-star restaurants I’ve worked at, but like most professions, the proof is in the pudding! I’ve been on yachts since 2015, and it’s been an amazing experience! I’ve recently moved back to Australia with my fiancé & nearly 2-year-old boy. 

What Attracted You to Becoming a Superyacht Chef?

I won’t lie; I came for the travel & money! But I stay for job satisfaction, people, and lifestyle.

What Aspects of Your Role Do You Enjoy?

Using premium products from all over the world is unreal! However, being able to create different dishes every day never gets boring. 

What Is Your Favourite Type of Meal To Create Onboard?

4 to 5 plated courses with wine pairing. It’s nice to work with Chief Stew and combine ideas. 

Which 3 Destinations Do You Enjoy Sharing With Guests (Food Perspective)? And Why?

  1. Italy – It might just be the most loved cuisine in the world! Like other European countries, every region has its speciality; no matter where you go, you will find something unique! It’s great to be able to incorporate local products into your menu. 
  2. Greece – Cooking Greek food in Greece in summer is easy, and everyone likes it! It’s healthy, fresh and tasty! You just have to take it easy on the late-night gyros! 
  3. Turkey – Amazing produce and seafood in summer; I feel it’s underrated!

Japan – I haven’t been there, but I can only imagine doing it by Yacht would be an awesome way to do it!

Having the preference sheets filled out accurately is essential! Including if they like raw foods, if they are late-night snackers, and the service styles preferred is helpful. Then I think it’s up to the crew to get to know the guests and move in the right direction.

What Does Savannah’s Itinerary Look Like for the Next Few Months?

I can only tell you that we will be in the Med for a busy season and will finish up at the Monaco Yacht Show.
